Made sushi again last night. This time with fresh yellow jack and mangrove snapper. Really good. From left to right: yellow jack sushi and sashimi, yellow jack and cucumber roll, yellow jack bagel roll (with cream cheese), spicy yellow jack roll (I hadn't put the spicy mayo on yet), mangrove sushi and sashimi.

It was great. Similar to permit, very firm and mild. Made fish tacos with some tonight and they were very good too.
