I'm going to be staying in the Key Largo area in mid-May. Can you recommend any beach or jetty areas where I can fly fish for small tarpon, snook, redfish? Unfortunately, not a spey caster.

You can fly fish from the sides of the Bridges for Tarpon and Snook, north or south ends, I prefer South ends over North.
Lower Matacumba has a very nice Flat on the Atlantic side and you can park right there, this is good for fly fishing, you can't miss it you can jump from your car to the water. You can pretty much fish just about anywhere so cruise around and scout some locations while you are there.
