8) Next time you catch a Permit and keep it, you toss that baby right in that smoker.

I thought Blues down here weren't much for table fair? Was under the impression if you wanted good bluefish you'd have to stick to the north east?

That was my first time eating Bluefish. The meat was good but nothing compare to snapper or permit. :D

Do you have to bleed them at all or are they a whiter meat?

Nope, I cleaned them well. I've read that the bigger Blues you have to bleed them out. I have to admit after you cook them you cant leave them in the fridge a for too long. They start to have a fishy taste to them.

I compete once a year. There isnt any bbq competion down our way. Most is up north and it is hard to break away from work. They will be a cook off around December. It is the Marine flea market/ BBQ cook off at War Memorial. Ill keep everyone post as time comes near.

Blues are not all that bad. I spice them up real good and fry them. From now on I would smoke them. Some people might not like Bluefish but I usually do not turn down any fish I catch that can be somewhat edible.
I dream of a better tomorrow... where chickens can cross roads and not have their motives questioned
