so i kind of jumped in feet first with out even looking for a good recipe for a good dip so i just figured i would see if anyone here had one

Here's one that I do. I will give it to you based on 1 cup of smoked fish. You can multiply it based on how much you want to make. It goes fast when I make it!

1 cup smoked fish with skin, bones and blood meat removed. Shredded up with a fork.

1/3cup whipped cream cheese.

1/3 cup sour cream.

2 tablespoons mayonnaise. (Or light mayo or Miracle whip)

1/2 teaspoon prepared horseradish.

1/4 cup finely chopped roaster sweet red pepper (buy these in a jar in condiment section).

1/4 cup finely chopped raw sweet red onion.

1/4 cup finely chopped fresh chives or green onions.

1 teaspoon finely cut fresh dill, or dried dill weed.

1/4 teaspoon Old Bay Seasoning (optional).

Juice from 1/4 lime. (Optional)

1/4 teaspoon hot red pepper flakes (optional)

1/4 teaspoon ground black pepper.

Salt to taste ( depends on how salty your fish is).

Mix it all up in a big bowl til smooth. Put it in the fridge for a couple hours to let flavors blend. Then taste it and adjust if necessary. You can add more mayo, sour cream or cream cheese if you want it creamier.

Recipe is based on classic style South Florida smoked fish dip with some tweaks and additions I made over the years based on different people's feedback.

Let me add that just your smoked fish and some cream cheese mixed half and half with no other ingredients can be pretty killer all by itself! Feel free to experiment based on your own taste.

That recipe above sounds good.


Here is my basic recipe..


3 smoked fillets (each maybe 3" X 8" each)
5oz cream cheese (this was Philly Brand, Onion and Chive) set out to warm up
5oz sour cream
4 oz Mayo
1/4 cup minced Vidalia Onion
1/8 cup of minced Celery
Minced Cilantro
2 tsp of Lemon Juice
Red Pepper
Black Pepper


Mix all the ingredients besides the fish first, then flake the fish into the bowl. A hand blender works well to combine everything, if you have one.

Serve with club crackers, tortilla chips, hot sauce and pickled jalapenos.


Another suggestion to try for next time, is to brine your fish before you smoke it. You will get a ton more flavor and a moister smoked fish. This is the brine recipe I use, I brine it overnight in the fridge, then pull the fillets out and let them dry on a rack before smoking them.

1 part Brown Sugar
1/2 part White Sugar
1/2 part of Kosher Salt
Soy Sauce
Teriyaki Sauce
Chili Paste
Garlic Powder
Water
