ceviche with sheephead and black drum

wish i had a pic because it came out very colorful...
cut the fish into bite sized pieces, let marinate in lime(3) juice for 30 min...
chopped up 2 kirby cukes, handfull of radishes, one red pepper, one green mango, one nectarine...a little sarachas and it was amazing.. would have thrown some cilantro in there but my dad cant stand the stuff...lol... hey if anyone has some tips for fileting sheephead im all ears.. that ribcage is a b1tch to cut through

nope.. they have all been in the 16 to 22in range...

I like it raw!..lol.... technically the soak in citrus "cooks" it... :chef: :toast: ... iam am boiling all the sheephead carcases now to try and get their mouths so i can make jewelry or somethin...
