I was at a bbq a few weeks back and the hosts were using one of those R2D2 looking smokers and it was off the chain.

Don't know what exact brand it was but it looked similar to this one...

We have been very happy with our r2d2 electric smoker. Set the thermostat and plug it in. We still use the wood chips or small branches for the smoking part. It also has the water bowl for humidity. I can plug it in before work and it keeps a steady temp all day.

If you want charcoal, get the Weber. I have the 18" Smokey Mountain and it is awesome. I can cook pork butts for 15+ hours and barely have to add coals or adjust the temps, it will hold temperatures really well. Check out http://www.virtualweberbullet.com/ for a ton of info.

I just did 2 racks of ribs last weekend with no issues, could have done 2 more. One trick is to either get a rib rack, or roll them and put a skewer to hold them together. Doesn't impact the taste or cooking at all. If you are going to be cooking for bigger crowds, you'll want the 22". But the 18" is more then enough for us, I've cooked 2 10 lb pork butts and a bunch of jalapeno poppers at the same time with no problem for a party. I've also smoked about 20 lbs of kingfish at once too on it.

For the first time, I ordered electric smoker to cook less-popular fishes like blues, blue runner, mullet, etc
What is the recommended temp to cook fish?
Any recommendation?
