hi i was looking for some new ideas to prepar grouper for tonight.

Can't go wrong with a Francese prep, it is probably my all-time favorite fish recipe for delicate fish like grouper or snapper. If your fillets are thick you may need to finish them off in a 350 oven so you don't burn the eggwash/flour in the pan. http://boatlessfishing.com/forum/viewtopic.php?f=29&t=8733

2 8 oz snapper filet
2 eggs
1/4 cup milk
1/2 cup flour
2 TBSP capers
2 oz white wine
1 oz fresh lemon juice
1 TBSP whole butter
salt and pepper to taste
Beat milk into eggs to prepare an egg wash. Season fish with salt and pepper. Dredge snapper in flour, then egg wash. In a hot skillet, pour a little olive oil. Saute fish, belly side down, until golden. Flip. Finish the snapper in a 350 deg oven until desired doneness is reached. Remove fish from oven and place on plate. Deglaze pan with white wine and lemon juice. Add capers and then finish with the butter. Pour sauce over fish and serve.

this is what I made recently with the tail section of a 24" scamp (head section was saved for another day, but you can also make it with a whole fish).
I butterflied the fish, took out backbone, seasoned inside and baked at 390° for about 25 minutes, then spread breadcrumbs and broiled for 5 more minutes, nothing too fancy or complicated, but a very healthy and flavorful meal, you can add some oven roasted potatoes as well that mix great with seafood :wink:
