POMPANO

can you fillet pompano. ive caught them but none large enough to actually fillet. also, whats a few good recipes for them?

Legal pomps are definitely large enough to fillet, you don't get too much meat from them, but still enough. As far as recipes, look in the recipe section. They are great deep fried in batter, in a stir fry, broiled, baked, just about any way you want to try.

ive caught plenty of 17 to 20 inch pompano, but they were'nt worth filleting. the reason i brought the filliting up, was this guy on a north carolina forum claims to have caught a 6lbs pompano that he had good fillets off of. i cant imagine a pompano that big.

Regulator, I filet ALL my legal pomps - even the barely legal ones and you can get plenty of nice filets off of them. Start at the base of the skull, there is ALOT of meat in the head.
You could always eviscerate em and bake or make en pappiotte if you are unsure of the knifework as to not waste meat, until you feel OK working the filets off.
This was a barely legal pomp sauteed W a butterscotch rum sauce and fresh garden peas.

Ever try steaming fish? That is how I cook most my fish.

I put the lookdowns in the toaster like POP-tarts

you can fit like 3 of them in each slot and even more if it's a bagel toaster.
