Spanish Mackerel Ceviche (European style)

I post this recipie as one of my favorite. It comes from Spain/Portugal region where it is also called Escabiche. Using a combination of spices will divelope a complex of pleasant flavors.

Recepie per pound of fish
1 Lb Fish Filet, all the dark parts of Mackerel removed (never frozen,same day catch)
2 tea spoons sea salt
Black pepper corn,Red Pepper crushed,Sugar,Cayenne Red Pepper,Fennel Seeds,Cardamom Seeds,Whole AllSpice,Coriander Seeds,Bay leaves,Cloves
2 Red Onions sliced
1 table spoon chopped Garlic
1 Tea Spoon White Wine Venegar
5 Soup Spoons Extra Virgin Olive Oil
4 Limes
4 Lemons
Parsley/Cilantro
Squeeze lemons/limes add White Wine Venegar and all the spices listed above (to the taste), salt and sugar
Add fish, onions,garlic,chopped greens (Cilantro/Parsley)
Mix well
Set aside to macerate it for 2,5 hours (min) but no longer than 5 hours

Serve it as an appetizer with a bread toasts and Tomato and Mango Salsa. The best with a shot of really chilled Russian vodka or light Beer ("Carrib" would do) Enjoy it!

Of course mackerel can be substitude with other freshest fish. On the picture is a vriety of diferent fishes made with this recipie (Spanish Mackerel,Mangrow Snapper and Pompano)

I am making this now. Looks awesome! I have no idea what it is supposed to taste like though. Sugar to taste is hard to gauge. Is this supposed to turn out sweet, as in 1-2 tablespoons?

Next Mac Ceviche. Love the stuff but never had Mac this way. Thanks for the recipe.
