I usually smoked salmon using a rib rub. Just use any fish rub that you can buy from the store. You can marinate with Itlian dressing and add your rub. I usually cook my fish on the hot side. Very important to use a wood that is not heavy in smoke flavor. Use a mild wood so it doesnt over power your fish. This is the forum I hang out at. You can do a search to put up recipe. http://forum.texasbbqrub.com/

Check out this site, I have no first hand experience smoking fish (but I sure love to eat it,) one thing I do know is that it is reccomended to brine your fish before smoking it. Do some other google searches for smoking fish and you'll find some info too. http://www.geocities.com/smokesticks/

Oh and I wouldn't smoke mangroves IMO, they are too good and delicate, just cook them or make ceviche if their fresh.

Put some spices, rub,or whatever marinade you want to use on the fish. Let fish marinade while you soak your chips. Then smoke them for 3 hours or so low heat. The first hour most of the smoking takes place. You can't go wrong, its pretty hard to mess it up. Now bring some fish dip to the pier!!!!! :thumright:
