why did my pompano smell so fishy

Hard to say -

FYI - I almost ALWAYS cook my pompano with skin on ( I Score it with a paring knife to keep it from curling.) Never fishy.

1 - Did you Ice down while still live or immediately after catching?

2 - Did you Filet within 24 hours?

3 - After Fileting Did you store in Refridge with Zip lock bag of Ice on top ( or similar ) W/ Drainage or freeze in freezer? If the Filet's were permitted to sit in their own "Juice" for too long, they amount of bacteria growth will increase and add to the smell / taste degeneration.
4 - Not sure about that salt and vinnegar thing - Why would you do that out of curiosity ?

These are the usual reasons, but other things may have occurred.

I`ve had Pompano iced down in the cooler for a couple of days no problem. I`ve also frozen it, again, OK.

The first thing you have to do is ice them immediately.

Like Cook`m said, what`s with the salt and vinegar? And the spices too? Sounds to me like you were starting to make cerviche`. How long before you cooked them did you have them in this state? Where they frozen or kept on ice?

Sans the Vinnegar IMHO. Ice wth a few cups salt water will do both of those things ( May be a lil slimy still, but you will have better results wiping them off with a towel rather than Vinnegar....
