mutton head soup

Anyone ever hear of making a soup stock with a mutton snapper head?

well being an indian, my mom makes kingfish curry, and sometimes if the fish is large enough, she makes gravy with the head, thats all i got.

I used to sell the heck out of snapper, grouper , and salmon heads at the fish market. Mix in some seasoning and veggies and I hear it tastes great after you boil it all and pick the meat off the skull.
Dreaming the dream that one day I can be as good as some of the boatless pros and catch some 12 inch mangrove snapper.

how did i forget groupers??? :lol: :scratch: they have one of the biggest heads and are very very tasty. IMO, its def. worth the time to pick through all the tiny bits of meat even in the larger sized snappers

I haven't but a Jamaican coworker of mine saw some pictures of big muttons I caught and is already asking me to save her the heads next time I go to the Tortugas.

Fish stock is a great source of calcium and minerals for bones, joints. Here is a link with more information:

Snapper heads are a prized ingredient. Search the web for some recipes or ask the folks that cook broth. Fennel & garlic add great flavor to the stock. You can use stock to make gourmet bouillabaise, soups or stews.

Yes, you can use Snapper and Grouper heads to make fish stock. It is not worth it if they are small. Like FF said, we usually will pick the meat out after the stock is made and strain any bones out. We usually make congee soup. This is alternative then eat shark fin soup.

Sea trout collar and cheeks are the best morsels on the fish. It takes a liittle work, some finesse and a sharp knife but it is well worth the effort. Its up there with otorro in my book.
