First filet, skin, debone, and remove blood line from Mac filets.

Use the marinade for only 2 hours, not 24 as the recipe calls for, otherwise, you'll have ceviche....

Wanted to try baking some snapper whole, so I used a couple of the smaller mangroves from this past weekend last night. I used Rijkaard's recipe from an earlier post but made a couple small changes....

I've tried this with bonito and flounder and they were both good. I fillet the fish (with bonito trim out the really dark soft flesh) and slice it across the grass into really thin pieces. Pour kosher...

salt and vineger makes them firm up and remove the slime

Sans the Vinnegar IMHO. Ice wth a few cups salt water will do both of those things ( May be a lil slimy still, but you will have better...

Ok here is the recipy i use most often when i cook spanish.

Ingredients...

1 or 2 spanish macks
1 lemon
whichever spices are on the shelf(salt, pepper, garlic being primary)
butter
2-4 beers

Now...
